Breakfast Casserole

2 T unsalted butter
1 c finely chopped yellow onions
1/4 c finely chopped green bell peppers
1/4 c finely chopped red bell peppers
1/4 tsp pepper
2 tsp minced garlic
6 oz. diced ham
6 oz. smoked sausage, chopped
8 large eggs
3c whole milk
1/2 c heavy cream
1-1/4 tsp Emeril's Original Essence Seasoning
8 c stale sour dough bread, cubed
8 oz. grated Gouda cheese (2 c.)
8 oz. grated Swiss cheese (2c.)
1/2 c fine dry bread crumbs
1/2 c grated Parmesan
2 T melted unsalted butter

Preheat over to 350 degrees. Lightly grease 3 qt (9x13) baking dish with Pam and set aside In medium skillet melt 2 tsp better over med. heat. Saute onions, green and red peppers, pepper and stir till soft - 3 min. Add the garlic, after 30 sec. remove from heat. Let cool.

In medium skillet melt 1 tsp butter over med. heat and cook ham for 3 min. Remove and drain on paper towel. Add the sausage and cook till brown, 5-6 min. Drain and add to paper towel.

In large bowl beat eggs, milk and cream. Add 1 t Essence and whisk. Add the bread cubes and let sit for 5 min. Add the meat and onion mixture. Add the cheeses and fold till blended. Pour into dish, cover with foil and put in fridge 8 hrs. or overnight. Cool to room temperature and bake till almost complete set - 55 min.

In small bowl combine bread crumbs, parmesan, melted butter and ½ tsp Essence. Uncover the casserole and sprinkle evenly on top. Increase over to 375 degrees and bake till complete set - 20 min. Let sit 15 min. before serving.

From a past Breakfast…


Crunchy French Toast

2 large eggs
1 T vanilla, cinnamon and sugar
1 t almond extract
2 oz. heavy cream
4 slices of sweet french break cut diagonally and lengthwise
2 c crushed corn flakes

Mix all ingredients together except the corn flakes. Dip bread pieces in the mixture and roll in crushed corn flakes. Spray pan with PAM and grill till golden.

Caramel Syrup

1 c brown sugar
1 c heavy whipping cream
1 c butter

Combine ingredients. in saucepan. Bring to a boil and serve warm over French Toast.
